1/2 tsp coconut oil
1/2 cup brown rice
1/2 cup chopped carrots
1/2 can chickpeas
1 cup broccoli florets
3/4 cups water
1/4 tsp turmeric
1 tsp curry powder
1/4 tsp salt, or to taste

Roast vegetables
1 aubergine
1 bell pepper
Olive oil
Salt & pepper, to taste
Fresh Chiilies

Step 1 Add 1/2 tsp of extra-virgin coconut oil, 1/2 cup rice, 1/2 cup of chopped carrots, 4 tbsp of cooked chickpeas, 1 cup of broccoli florets, 3/4 cup of water, 1 tsp of curry powder, 1/4 tsp of ground tumeric and 1/4 tsp of salt,
Step 2 Cook with "Rice" mode.
Step 3 Cut 1 aubergine and 1 bell pepper into slices. Place onto a baking pan with baking paper. Add olive oil, black pepper and sea salt.
Step 4 Bake at 325F for 20 to 25 mins.
Step 5 Add with curry rice cooked in step 2.
VOILA! Add fresh chilies and enjoy your Curry Rice!
