1 tbsp flax meal
3 tbsp water
2/3 cup all-purpose flour
1/2 tsp ground cinnamon
1/4 tsp salt
1/4 tsp baking soda
1/4 tsp baking powder
1/4 cup brown sugar
3 tbsp vegetable oil
2 tbsp oat milk
1 cup grated carrots
1/4 cup raisins & chopped walnuts

For Cream Cheese Frosting:
2 oz vegan cream cheese
1 tbsp powdered sugar
1 tbsp extra-virgin coconut oil
1/4 tsp vanilla extract

Step 1 Add and mix 1 tbsp of flax meal, 3 tbsp of water, 1/4 cup of brown sugar and 3 tbsp of vegetable oil into a cup.
Step 2 Add 2/3 cup of all-purpose flour, 1/2 tsp of cinnamon, 1/4 tsp salt and 1/4 tsp baking powder into a bowl.
Step 3 Combine ingredients from Step 1 and Step 2. Mix and add 2 tbsp of oat milk, 1 cup of grated carrots, and 1/4 cup of raisins & chopped walnuts.
Step 4 Pour into a round cake baking pan and place a piece of baking paper on top. Place into cooker and use "Cake" mode
Step 5 Let it cool down completely. Add and mix 2 oz of vegan cream cheese spread, 1 tbsp of powdered sugar, 1 tbsp of extra-virgin coconut oil and 1/4 tsp of vanilla extract into a bowl.
VOILA! Top cream cheese frosting made in Step 5 on top of the carrot cake. Finally top with ground cinnamon and enjoy some delicous carrot cake!
